Memorial Day Vintage Cookbook Menu: Sandwich Supper

 My Holiday Cookbook from Favorite Recipes Press, late 60's, has several Memorial Day menus, including this pictured picnic. The photo below with the Sandwich Supper menu intrigued me, though.  It suggested a :Kraut and Frank Poor Boy, an Endive, Cucumber, Radish and Olive Salad, French Dressing, and Mixed Fresh Fruits. Look at that Sandwich. Are you supposed to eat the entire thing?  How would you eat that without losing one of the franks? But the recipe calls for slicing them up...Interesting.

However you are honoring memories and people tomorrow, enjoy your day!

Kraut and Frank Poor Boy:
2 tablespoons butter or margarine
4 frankfurters, cut in 1/4 inch slices
1 medium chopped
1 small green pepper, chopped
1 tablespoon flour
1 teaspoon seasoned salt
2 cups drained sauerkraut
1 cup grated process American cheese
1 15-inch French bread loaf, cut in half lengthwise
Melt butter; add frankfurters, onion and green pepper.  Cook over medium heat, stirring occasionally, 10 minutes.  Add flour and seasoned salt; stir well. Cook over low heat, stirring constantly, until thickened.  Add kraut and cheese.  Cook over low heat, stirring frequently, until cheese melts.  (That's a lot of stirring...)Wrap heavy duty aluminum foil around crust of bread, leaving top uncovered.  Spread kraut mixture on tops of bread.  Bake at 350 F for 25 minutes. Yield:  8 servings.
